VERY poorly handled situation. The butcher accidentally killed the wrong animal. He did not wait for my father-in-law to get... there and instead shot our bull before anyone was there to direct him. Then, he apologized, but rather than offer to pay us thevalue of the bull (that we were planning to use as a breeder bull), or at least do the butchering for free, Elevation MeatMarket only gave us a 15% discount on the butchering (my father-in-law still agreed to pay them after all that, which we don'tagree with, but that's another story). Then, they gave us only 8 packages of steaks, 2 tenderloins, and 1 roast (46.62 lbstotal) and the rest they just ground into hambu guyrger. We've had several beef done in the last few years by other butchers andthe ratio was always much closer to 50/50 steaks and hamburger (even with older cows). We are very disappointed. And on top ofall that, I called and asked if there had been a mistake and they hadn't given us all of the meat we were supposed to get, togive them the benefit of the doubt. They said that we had gotten all of it, then suggested that my husband did not indicate thathe wanted very many steaks on the cut sheet he filled out, which is why we didn't get more. Then they claimed to have lost hiscut sheet so they couldn't verify what he actually ordered. Just a poorly handled situation in every way. Elevation Meat Marketis very lucky that we are understanding people; many people probably would have sued them over this situation. I felt the need to update my past review a bit. Pros: - Local butcher and processor. Happy to have them conveniently in-town. -... Kind, honest, helpful staff - Quality meat (especially impressed by the decent shrimp and seafood) - Have heard good thingsabout pizza/have had good sandwiches. Excellent lunch option. - Always always ask to honor our veterans and military members adiscount. I?m neither, but so appreciate that. Cons: - Can get a bit pricey for the level of quality. All the while, I have hadconversations w/ staff and KNOW the realities of their shrinking margins. THANKS INFLATION! Do not blame Elevation 100% here. -Have had a few iffy experiences with past employees + some pretty long waits (20+ minutes). This can make it hard to choose forlunch. - I have heard from many now that the meats, cheeses, etc. are not as local as they?d have liked. All in all, Elevationwill continue to have my business. First time having an animal processed. The whole family was AMAZING- friendly, compassionate, teaching, all around wonderful to... interact with. From start to finish everything went well, picked up my pig yesterday, eating her bacon as I write this and I amin love with their processing. Well worth the cost and distance! My family and I stayed in Westcliffe and decided to grab our cabin supplies from the local businesses, including Elevation Meat... Market. The store is a small shop just off of Main Street. The ladies were friendly and eager to help with our choices. Weended up with applewood bacon, breakfast sausage links, bratwursts, sliced smoked turkey and pepperjack cheese. All of whichwere fresh and high-quality. It was some of the best meats we?ve had in a very long time. I would highly recommend ElevationMeat Market to anyone in the Westcliffe area. Read more
