On the lower-upper section of Nacogdoches Road, it seems like there's at least 2 taco joints every block so it creates good... competition. This latest food trailer is nestled in a parking lot adjacent to a gas station. Bright yellow and adorned inlights, you can't miss it. They offer tortas, mini tacos, gorditas, quesadillas, or regular tacos, all with various fillings. We opted for the campechana mini tacos that came with a side of frijoles charros. For the mini tacos, the finely diced meatswere spot on, and presented beautifully. The small tortillas were lightly cooked so to make them malleable so they could wrapthe generous amount of filling around them. Loved the toreado onion and jalapños as well as the radish, cucumber, diced rawonions, cilantro and lime wedges they threw in. The combination of smells from all these together was an pleasant pouncing onour olfactory sense as we opened the to-go container. But what was truly magical, was adding all these vegs to the tacos,creating such delectable taste and textures. The beans, upon opening, looked amazing. Tried them but, to me, they lacked somegarlic and salt. No worries, I grabbed me some garlic powder and salt from the pantry and Salt Bae'd them into the cup.
