This was an exquisite bar, and fit right in with the vibe of the beautiful hotel. All of the drinks were made to perfection. The... martini was crisp and glassy, and the French 75 was probably the best one we?d ever tried. This bar is nice but overrated and overpriced. If atmosphere and being in the Chateau Frontenac is the most important factor,... then I would recommend coming here. Otherwise there are many other restaurants and bars nearby with amazing quality and muchbetter value for comparable prices. The charcuterie board and drinks are good but overpriced for what is served. This wasdisappointing compared to the many amazing restaurants in Quebec City with high prices but great value and quality. I give one star for the atmosphere, which is a clever juxtaposition of classic and modern, with a fantastic view. The second... star is for the cocktails: quite pricey but both my drink and my partner's drink were delicious and unique. But the positivesend there. The service was slow and dismissive. We were seated for 30 minutes before we had cocktails in hand. We had to flagdown the servers to get any attention, sometime multiple times. The place was busy but not unusually so, as they limitcapacity. The seats--we were seated near the window rather than the bar--were very low to the floor and uncomfortable. Thefinal straw for me was when a manager broke a glass, and left the broken glass on the floor for over 5 minutes before someonefinally cleaned it up. The broken glass was in a server and customer pathway, on a hot day when customers were wearing sandalswalking through the glass. No one took initiative to clean the broken glass until they saw me taking a photo...it wasemblematic of how we were treated as customers. Read more

Stylish bar right at Frontenac, on the first level- next to the restaurant Sams Bistro overlooking the Dufferin Terrace. Good... menu of cocktails and drinks; ( we had some drink called -OperationNeptune drink that was particularly smoked with a torch).Must go by itself or while you wait to be seated at the Sam s. We went to the 1608 Bar while staying at Fairmont Chateau Frontenac in March, 2022. We have stayed at other Fairmont Hotels... across Canada and have tried out the various bars at the hotels. 1608 Bar is rich in history, has a unique and cool ambience toit. The drink menu wasn't incredibly large and most of the drinks were on the higher side. It's too bad you couldn't reallyorder food here (light snacks) Usually the bars at these hotels offer comp. snacks ie. popcorn etc. and I don't recall beingoffered any of this. It was still nice to check out and enjoy a drink here. Our server was pleasant, took the time to go overthe various drinks with us, and made suggestions on what we should try. Read more
