Everything about this place is great. The food is spectacularly executed, as are the drinks, and the staff is top-notch - I've... not had a better dinner experience outside of one restaurant in Lyon, France. And this is in little ol' New Castle, so the drivefrom Denver is much more convenient than the flight to Europe. And the parking is way easier. We (party of 4) had the coconutshrip, pork belly bao, and the reuben eggrolls to start, with the party enjoying beer, wine, and the Hot Madame. If I were todo it again, I'd probably skip the eggrolls and go for the shrimp and grits (diner's remorse?), not because I disliked theeggrolls, but because I really wanted to try both. The bread and butter placed on the table were both wonderful and seemed veryfresh. Entrees were the pork osso bucco (perfect), the curry-encrusted shrimp (spicy, but not too spicy), the baked cod(lemony, but there's still good cod flavor), and the wild-caught sea scallops. The latter is difficult to do this far inland, asscallops can be pretty delicate and can be yucky if not fresh. They're not difficult to cook correctly, but they're easy to doincorrectly, if that makes sense. These were absolutely as nicely done as the best I've had on the East Coast. One of our numberalso added on a soup du jour that she raved about. The staff are 100% rock stars. We were made to feel very much at home, andthey were extremely patient with our many questions. They have their own "Manhattan Project", which is 10 variations of theclassic drink developed whilst the world was shut down for Covid. This is a solid example of what happens when winners don'trest on their laurels. Of course, we had lots of questions about the Manhattans, and they were great about taking the time totalk about the whole thing. Flavour forward. Alex our server treated us cackaling girls like royalty. Atmosphere was warm and inviting. Everyone was happy.... We did not want for anything. This is the way fine dining should always be. Thanks EAT for a wonderful evening with my friends! Read more

We celebrated my birthday at EAT Bistro and Drinks and it did not disappoint!! This was one of the best meals I have ever had!... We had drinks, appetizers, entrees and desserts! Every single item was delicious! The staff were great. The atmosphere was fun.This is truly a hidden gem in the cute little town of New Castle! We can't wait to go back!! Read more

First time at Newcastle CO - locals fave & culinary delight. Only a stranger once because staff will take care of you... personally. Greatest food on west slope. Try the Molly Christo named after their great cook and owner. Desserts were homemade,rich, and decadent too. Read more
