Salt & Vinegar at Ethereal Brewing Public House threw it down! Bratwurst & Mash - House Ground & cased 100% Sunwatch Homestead... pork bratwurst. Whipped potato. Au Jus gravy. Snow peas. This plate boasts balance. In temperature, flavor and textures.Freshly seared snow peas lead the charge with temperature heat saturated in fine salt piercing my palate with the first bite.Giving way to the house made au jus bursting with flavor followed by the pillowy texture of the whipped potato. Following theinitial bite I cut into the local Bratwurst to find 2 distinctive features of this brat. 1) the casing split open easily to findcolor! Come to find out Greg not only cases these brats in house but sous vide the brat to a just above safe temp 141° (yea,yea, yea, 145 for pork is a good guideline but not gospel). 2) there are actual chunks of meat in there. I mean chunks. Thisbrat maintained its structure with every bite but barely. Truly unique brat in texture and preparation. This paired with theBanana Foster Baba Yaga made for a unique meal. Those sweet stout flavored lingered into the well seasoned and prepared meal tomy surprise. Greg uses a very precise spice mix and Greg is methodical in his preparation and it shows. Food was good but expected more both in volume and in spirit. Our whole group was excited to see hot browns on the menu as we... hadn?t had one yet during our trip to Kentucky. All three in our group had this dish. To me it was more of an open face hamsandwich and less of what I have known to love as a hot brown but still a good plate of food, well executed. We did however getfried chicken on the way back to our air bnb because we were still a bit hungry, perhaps we should have had a couple of morebeers to fill us up (the beers were really good too). Went for a lunch stop while driving through Lexington and was impressed with this German American restaurant located inside the... Blue Stallion brewery. We tried the chicken dumplings (with spatzle) and the chili made with bratwurst and cornbread-so good!Everything was tasty and flavorful, as good as the pictures! These dishes would go well with the wide selection of beers fromthe brewery. Definitely worth the stop! Read more

I can?t speak more highly of Salt and Vinegar, and would recommend it above even the most expensive options in Lexington. The... quality and ingenuity of the food is amazing. I can't recommend Salt and Vinegar enough. Everything was great and the steak was beyond perfect!
