I'm sorry, I'd love to eat here because I love falafel and hummus, but for a food truck to be charging such high prices and... every single review saying the wait is 45+ minutes is ridiculous. Chickpeas are cheap. Pita is cheap. Frying this stuff up takes3-5 minutes. Your staff should be able to work 5 plates at a time, not one at a time. The excuses by the owner for producing 1plate per cook every 10 minutes is not valid. The reason you have to have such high prices is NOT because of qualityingredients, but because of such poorly trained cooks causing high labor costs. Even if making each item from scratch, each ofyour cooks should be able to crank out a plate every 2-3 minutes on average, because they should be working on multiple ordersat a time. $23 for your vegan plate is unacceptable (who would order without pita or garlic fries?), especially from a foodtruck. Lower your prices and train your cooks, then I will visit, and would visit weekly. Read more

Good food, with covered seating area next to the food truck. Friendly staff. Took a little longer than expected for food to be... prepared but it is understandable as there is only 1 person cooking and the other person is taking orders dealing withcustomers. Read more

This is the third time I?ve waited 34 minutes for my food, after I waited 10 min for them to acknowledge me to take my order.... The first two times I didn?t write a review, but this seems to be a common issue (at least every time I?ve been here) needlessto say- I won?t be coming back. The food is excellent, but a little costly for the service, portions and ingredients. I?ve seenthe responses of other reviews and the excuse the owner makes for the service and food preparation is not acceptable. I?ve eatenat a lot of restaurants who prepare their food fresh and source local and there?s no reason it should take you 34 minutes toprepare such simple items. It?s obvious if multiple people are complaining about the same problem- you have an issue, so pleasedon?t continue to make the same excuse, instead learn that you need improvement in this area and change it, because I?m not thefirst nor the last customer you will lose if things continue as they are. Solid Lebanese fare. Babaganoush is fast, and so are the wraps. Prep is a bit slow but good food takes time. I?m excited for... their transition from truck to restaurant. Def worth the walk for Downtown hilo compared to the other restaurants availablethere! Read more

So I enjoy the food here. It is different from anything else in town. The only down side is the absurd amount of time to takes... them to prepare food. Glacial would be the most appropriate descriptive word on the speed at which food is prepared anddelivered at Tabaraka. I ordered three sandwiches 1 hour ago, and I am still waiting. They were able to complete three ordersfor a total of six plates of food over the last 60 minutes. Or an average of two workers producing one sandwich every tenminutes. It is pretty impressive. That said, I do enjoy the food! Read more
