My visit to Castor was wonderful on all levels, except one. The dirty martinis that we ordered were on the small side and weak.... Any high-end restaurant should provide cocktails that are large and powerful, and charge for it. The only other missing thingwas that I wished that I had a crust of bread to soak up the delectable sauce of my black cod. So, it would be great to havebread offered on the side. Beautiful restaurant, Zenaida gave amazing service and knew the menu well. The food was outstanding. The best I've had in years.... The brisket sandwich was slow cooked for 12 hours and melt in your mouth delicious. Homemade pickles, ketchup, chutney and othercondiments. The salad was dressed perfectly, the french onion soup was savory and delicious in the cold weather. I also had theTurkey sandwich which was amazing as well. A definite winner and must-try. Went for a drive from Eugene and wound up In Corvallis. Looked up restaurants on line and found Castor. We got lucky and got a... table. Gotta say best damn meal I?ve had in a very long time! Hats off chef! Service was on point! Everyone so welcoming &personable. Was craving vegetable?s (never not get meat) had the Fall Vegetable & Lentil?s. Mom got happy hour filet mignon. Wewere both practically licking our plates. Definitely will go Day Tripping to Corvallis again just for another meal! Read more

Amazing southern American restaurant in Corvallis! Definitely give a credit for southern American restaurants, you can barely... find any in Oregon. I love their food taste and drinks too, I think it?s actually better than most of the 3 $ signsrestaurants. Service are nice but it can be long wait even tho you sit down. I visited here couple time and it average take you2 hours to finish your meal. Read more

I am impressed by their dishes. It's a beautiful place hiding in downtown. You need to wait a little bit longer than you expect... the time when your dishes come up. So I recommend people who is not in a rush and have long conversations with friends or familywhen coming to this place. Nice atmosphere. The price is a little bit high but it's worth it. Read more

Walking in feels like a bustling yet intimate atmosphere. Tapestries hung throughout and there is a labryinth of small... semi-private dining areas that are perfectly lit. Full bar with fresh made drinks. Appetizers and entrees that can meet anypalette with local ingredients. Staff were awesome, inviting and knowledgeable with a pleasantly slow cadence that allowed for agreat experience. The appetizer menu reached just a little and had fun flair unique to this establishment. Downtown parking.Prices were ok considering quality and portions. Read more

What a delight to eat food from farms we are also shop with. The local fair was both familiar and delicious. It is a bit on the... pricey side, and we did feel a smidge of a lack of attentiveness for the up scale feel they are going for. That said, the staffwere very friendly and pleasant. We really like the atmosphere. And the location not directly on the busy main street was a realplus. The food is very delicious! The sous vide pork chop was tender and properly seared, but perhaps a little too big leaving afew bites a bit dry. The sauces are all to die for! Can't say enough about the difference that makes! The stake was very good aswas the scallop app with another amazing sauce. With a rotating menu based on local fair, this will become a regular routine forus for sure! Read more

My experience at Castor was very good! The food was cooked to perfection and the staff was very kind! I was able to enjoy a... variety of dishes. The fries with the white truffle oil were amazing. I don't think I would change anything except having moreuniform cuts on the fries. The beef fillet with grits and roasted vegetables were delicious and the beef was very tender. Ithink presentation was lacking just a bit but overall a wonderful dish The sous vide pork chop was the most tender and melt inyour mouth pork chop I've ever had. They seared the pork chop after the sous vide, which locked in the flavor perfectly! Thevegetables were amazing and had such a good flavor, especially when paired with the pork! The Chocolate Pot de Crème was madewith espresso custard and coffee whipped creme. I personally think that it was a lot less viscous than a normal custard shouldbe. That being said, the flavor was very good. The coffee whipped creme was a little light in flavor. The staff were veryfriendly, but there were some mistakes made. The one disappointment was the mix-up of another tables dinner. We were servedother people's food which made the eating with family experience a little less inviting, but they fixed everything and broughtout the right dishes to everyone after everything was figured out.
