3 stars for the Service that was very good. Grilling a Steak 101 take notes. 1. Take the steak out of the fridge so it can rest... and get room temperature before grilling.( mine was raw in the center and burned outside not medium like I asked. This is duethe temp of the steak when they grilled) 2. Season the steak before grilling. (Completely bland) 3. Baste with butter on the panwith Thyme or other aromatic fresh herbs.(butter was place on top after to try to flavor the steak) 4. Let it sit for a whilebefore serve. (I don't think they let it sit) 5. Create the perfect side for the steak.( Mashed potatoes were awful) This placemake me loose faith in humanity. This is the last steak house that I am going to. Next time I want to have a Great Steak I willdo it in my house. We pay 449 dollars for 3 people. For a mediocre Steak. This is not right. Read more

Best restaurant my husband and I have been to so far in Colorado Springs. Will definitely be coming back for a number of things.... To start with, the atmosphere was warm and inviting. There was a fireplace, comfortable couch seating area, low lights, andheaters outside if it’s a chilly night. Next up, the food was amazing. So many great options to choose from. For us, we reallyenjoyed the oysters and mussels as appetizers. Everything was super fresh! The mud pie for dessert was also a BIG hit. Lastly,Josh was one of the best servers we’ve both ever had. He was super friendly and kind. He made the experience extremelymemorable for us. He was very informative and gave us great recommendations on the drinks and food. If you want to eat the best steak ever, you must stop at Cowboys Start Restaurant. I celebrated my anniversary with my beloved... husband, and what an experience - Top notch for sure! I have had the pleasure of eating good steaks from different localsteakhouses in the city (The Steakhouse at Flying Horse and the Famous among others) and Cowboy Star steaks were exceptional. Ihad the 18oz Rib Chop, and my husband had the 18oz T-bone steak aged for 21 days. They were full of flavor no special saucesneeded. The service was extraordinary as well. We celebrated our anniversary at Cowboy Star. We were welcomed with a red rose and card signed by their staff. We had a... phenomenal meal. The Wagyu steak, halibut, shrimp were perfectly prepared. Everything from cocktails to dessert were amazing.Our server Rachel with Josh and Chris didn’t miss a beat. Manager Kevin coming to our table was such a wonderful touch to aperfect evening. We love this place! It’s great for a special anniversary/celebration or a girls night out. The food is always excellent and... the service is some of the best we’ve experienced at a restaurant in the Springs. The chef gets it right every time! Myhusband and I celebrate our anniversary with dinner at Cowboy Star every year for the last 3 years and their attention to detailmakes it so special…a red rose at the table, a card signed from the staff, etc. etc. As far as the food: The oysters areincredible and always fresh. If you order a steak make sure to add shrimp- they are just as delicious as the steak! We love thecauliflower and Brussels sprouts side dishes. Seasonal salads are delicious and their coffee is the best way to end the meal!You also can’t go wrong with an ultimate burger and a sangria for a girls night. Overall rating this place 5 stars! The best steaks in town at this price range. Generous portions of everything. This place serves the nicest porterhouse I’ve... ever seen (my girlfriend and I couldn’t finish it) and there’s several menu items I’ve never seen offered anywhere else. Iordered the spicy margarita and chocolate chip bread pudding… and both of these items were far better than I had imagined.This place is really snazzy, and everyone is working hard to maximize the experience.
