We are new to the area, and tried Victor's for my birthday dinner. I was very impressed with the ambiance of the restaurant. ... Our server was the only one working, and did a great job taking care of us. We tried the calamari and spring rolls for apps, andthey were both very good. We ordered a round of Miso soup, and were a little disappointed by the fishy taste of it. We orderedan array of dinner dishes, including a custom sushi roll. Everything was very good! Victor's sushi is a great place to get sushi in the area. Considering it's geographic location, it leans towards the more... expensive side but the fish and service are always high quality. I wish they did not charge extra for every little thing you askfor as no other traditional sushi restaurants I have been to do that but being it is the only true place to get sushi in thearea, we will be back from time to time. Absolute hidden gem. Hard to believe unless you?ve been. I tend not to leave reviews?but this feels needed. We made a 6:45... reservation through Google assistant (party of 5) - table was reserved and set. Host was great. Victor?s had a great selectionof sake, beer and cocktails. We ordered several different drinks (asked the waiter for sake recommendations). Timely andquality. The app and small plate menu offered the staples (goyza, edamame, wontons, etc.) and some exotic Chef inspiredoptions. The entrees and rolls were incredible. The rolls were made with discipline and aesthetic. Taste was fresh and tough toreally fathom. The Miso ramen was authentic. A+ seasoning and attention to balance. Service was graduated. Even the itamaegreeted our table after the meal. Atmosphere is fun. Feels like a NY or LA lunch spot. Nice bar. This is a must try. I know itseems impossible?but trust Victor. This is a gem. Wow! What a hidden gem in the CO plains area. We were lucky to stumble upon a top rated sushi place with super friendly service... and totally worth the visit! This is now a must-stop on the long drive to and from Texas. Read more

Delicious sushi. The oysters are worth every penny. The staff are friendly. I was hesitant to have sushi so far from the city... and the ocean but am SO grateful for this gem in the prairie. Victor works hard to make sure everything is fresh and you cantaste it! Read more

The food was exceptional. The service was good. I have to stress how good the food was though. The wantons were really good, the... sushi roll I had was the best in the area.
