I wish I could give this place more than 5 stars. The moment we walked in they knew we were there celebrating a friends... birthday. They wished her a happy birthday THEN brought all of us champagne to do a birthday toast THEN had happy birthdayprinted on her menu and THEN brought her a dessert at the end with happy birthday written on the plate in chocolate. From thecharcuterie board to the scallops to the sea bass, not one thing was missed in the food preparation or the service. We willdefinitely return as this was the culinary highlight of our trip! We did the 5 course chef's tasting menu + wine pairing. The savory dishes were all a tad on the salty side, but I prefer that... over not salted enough. We had (what I think is) the best spot in the house, a high top right by the kitchen so we could see allthe action go down and see what everyone was eating. My family and I were very impressed and had a great experience! The atmosphere was awesome, the service was exceptional and the... food was delicious. The bluefin appetizer/snack was hands down the best item on the menu!!! It was a great recommendation fromour waitress and assistant server(s). Our waitress was very attentive and accommodating. We were visiting from another state andheard wonderful reviews about Rootstalk, so we decided to celebrate my birthday at this wonderful restaurant. They included afree appetizer, 2 free birthday toast drinks for my husband and I, dessert and a birthday card signed by all the staff to helpmake my birthday a memorable one.The staff went out of their way to make sure I had a memorable birthday and that my family waswell taken care of. We did the 5 course experience. Service is amazing. We really felt special because we were celebrating our anniversary. They... gave us a card and 2 drinks. The food? It's alright. For the price, I'm gonna say it was not worth it and it's not about theportion. They all look very delicious and appealing but I'm not sure about the taste. I do have a personal preference when itcomes to food and I am very open to try new things but this was just "ehh". The pasta and the meatball in it was very verysalty. I had a hard time finishing it. The steak, it was okay. The dessert was something like a lemon meringue and did notreally hit the spot the carrot cake was good though. They did say that if I don't like the dish they can make something else butI also just wanted to experience the whole 5 course meal without having to change anything. Food and service was stellar! At our waiter?s recommendation, we decided to share our meals which was a great way for us to try... out a lot of different dishes on the menu. We did the 7 course tasting menu with the wine pairing to celebrate our... engagement and the staff did everything possible to make our experience perfect. Do not miss out on this place while in Breckenridge. Chef Matt is top notch and reservations + the tasting menu are a must at... this restaurant. Priced amazing for the cuisine you will receive. Portions are very generous and well thought out. Great winepairing with tasting menu. Definitely a highlight of Breckenridge! Must visit!!!
